Grilled Vegetables
The original recipe comes from Happy Foods Tube
Ingredients
1 Medium Zucchini
3 Medium Carrots
2/3 lbs Baby Potatoes
1 Large Red Onion
2-4 Garlic Heads
4 tbsp Extra Virgin Olive Oil
1 tsp Dried Garlic
1/4 tsp Black Pepper
1 tsp Sweet Paprika
2 tbsp Marjoram (or oregano)
3/4 tsp Salt
Directions
Cut zucchini into chunks
Peel and slice carrots
Cut potatoes into quarters
Cut onion into quarters
Add above vegetables to large bowl, drizzle with olive oil
Add dry spices, and toss to coat evenly
Divide contents of bowl onto 4 sheets of foil, reserving remaining oil mixture
Trim top of garlic to expose tops of cloves
Press tops of garlic into oil mixture to soak up oil and spices
Place one garlic head into each foil packet
Wrap packets tightly
Place on grill for 60-90 minutes, or cook in oven at 400 degrees for 30-35 minutes
