Salmon Rillettes

The recipe comes from Bon Appetit.

Ingredients

  • 2 cups dry white wine

  • 1 small shallot, minced

  • 1 lb. salmon fillet, cut into 1 inch pieces

  • 3 oz. smoked salmon, cut into 1/4 inch pieces

  • 1/2 cup mayonnaise

  • 2 tbsp. fresh chive, thinly sliced

  • 1 tbsp. fresh lemon juice

  • sea salt and black pepper

Directions

  • Bring wine and shallot to a boil in small sauce pan over high heat

  • Reduce heat to low, add salmon

  • Gently poach salmon until barely opaque in center, about 5 minutes

  • Transfer cooked salmon to paper towel lined plate to drain

  • Strain poaching liquid through fine mesh sieve, discard liquid

  • Place salmon and shallot in large bowl, cover and chill until completely cooled

  • Add smoked salmon, mayonnaise, chives, and lemon joice to salmon and shallot

  • Gently mix to combine (break salmon up slightly, but do not overmix or paste will form)

  • Season to taste with salt and pepper

  • Serve
