Salmon Rillettes

Ingredients
2 cups dry white wine
1 small shallot, minced
1 lb. salmon fillet, cut into 1 inch pieces
3 oz. smoked salmon, cut into 1/4 inch pieces
1/2 cup mayonnaise
2 tbsp. fresh chive, thinly sliced
1 tbsp. fresh lemon juice
sea salt and black pepper
Directions
Bring wine and shallot to a boil in small sauce pan over high heat
Reduce heat to low, add salmon
Gently poach salmon until barely opaque in center, about 5 minutes
Transfer cooked salmon to paper towel lined plate to drain
Strain poaching liquid through fine mesh sieve, discard liquid
Place salmon and shallot in large bowl, cover and chill until completely cooled
Add smoked salmon, mayonnaise, chives, and lemon joice to salmon and shallot
Gently mix to combine (break salmon up slightly, but do not overmix or paste will form)
Season to taste with salt and pepper
Serve
