Fresh Fettuccine

The recipe comes from my father.

Ingredients

  • 3.5 cups white all purpose flour

  • 5 large eggs, at room temperature

  • 1/8 tsp salt

Directions

  • Add flour and salt, and mix in bowl

  • Add eggs one at a time, mixing well

  • At the end, add more flour or egg until texture is correct

  • Rest dough for 10 minutes

  • Working in batches, roll out dough to final pasta thickness

  • Rest each dough sheet for 20 - 30 minutes

  • Slice into pasta

  • Dry sliced pasta for 2-4 hours
