Fresh Fettuccine
The recipe comes from my father.
Ingredients
3.5 cups white all purpose flour
5 large eggs, at room temperature
1/8 tsp salt
Directions
Add flour and salt, and mix in bowl
Add eggs one at a time, mixing well
At the end, add more flour or egg until texture is correct
Rest dough for 10 minutes
Working in batches, roll out dough to final pasta thickness
Rest each dough sheet for 20 - 30 minutes
Slice into pasta
Dry sliced pasta for 2-4 hours
Refrigerate or use
