Bolognese Sauce

Ingredients
1/4 lbs. bacon, chopped
1 medium onion, chopped
1 large carrot, chopped
4 cloves garlic, minced
4 tablespoons butter
3 tablespoons olive oil
1 1/2 lbs. ground beef
1/4 - 1/2 lbs. ground pork
1 cup beef consomme
1 cup dry white wine
28oz can crushed tomatoes
1 tsp. salt
1/2 tsp. pepper
1 1/2 tsp. rubbed sage
1 tbsp. oregano
1/4 tsp. ground nutmeg
1 cup whole milk
Directions
In dutch oven, heat butter and olive oil until butter froths
Add onion, carrot, garlic, and bacon
Cook 10 minutes until onions are translucent
Add ground beef and ground pork and brown
Raise heat to medium-high, add wine and consume, cook until reduced
Turn down to simmer, add oregano, salt, pepper, sage, and nutmeg
Cook for 20 minutes
Add tomatoes and bring to boil
Reduce to simmer, cook for 2-4 hours
Add milk, simmer for 10 minutes
Serve
