Bolognese Sauce

Ingredients

  • 1/4 lbs. bacon, chopped

  • 1 medium onion, chopped

  • 1 large carrot, chopped

  • 4 cloves garlic, minced

  • 4 tablespoons butter

  • 3 tablespoons olive oil

  • 1 1/2 lbs. ground beef

  • 1/4 - 1/2 lbs. ground pork

  • 1 cup beef consomme

  • 1 cup dry white wine

  • 28oz can crushed tomatoes

  • 1 tsp. salt

  • 1/2 tsp. pepper

  • 1 1/2 tsp. rubbed sage

  • 1 tbsp. oregano

  • 1/4 tsp. ground nutmeg

  • 1 cup whole milk

Directions

  • In dutch oven, heat butter and olive oil until butter froths

  • Add onion, carrot, garlic, and bacon

  • Cook 10 minutes until onions are translucent

  • Add ground beef and ground pork and brown

  • Raise heat to medium-high, add wine and consume, cook until reduced

  • Turn down to simmer, add oregano, salt, pepper, sage, and nutmeg

  • Cook for 20 minutes

  • Add tomatoes and bring to boil

  • Reduce to simmer, cook for 2-4 hours

  • Add milk, simmer for 10 minutes

  • Serve
